Charity kvass for children from Ukraine
The Wolny Kraft Association and the Legia Foundation, together with other partners, are organizing a new project — they will jointly prepare kvass. It is made from bread that would otherwise end up in the trash, in accordance with the zero waste idea and an old Polish recipe. The income from the campaign will be donated to the education of children from Ukraine.
Kvass is a drink with great traditions. The more fortunate had the opportunity to try it at their great-grandmother's, grandmother's or mother's. Paweł Leszczyński, president of the Wolny Kraft association, the originator of the Warsaw Beer Festival, has ambitions to recreate the original old Polish flavours. He makes natural kvass, with sourdough and wholemeal bread. Importantly: without added sugar, but (in some variants) with the addition of hops, cumin or coffee. And most importantly in the spirit of the zero waste idea.
In Poland we don't like throwing away bread, it's rooted in our culture. So we started thinking about what we can do with it that's original and interesting. – says Paweł Leszczyński. – We developed the recipe ourselves, based on how kvass was made in the past. – adds Michał Lassota, another member of Wolny Kraft. Our sourdough is made from leftover wholemeal rye bread and a malt mixture in the fermentation process with the sourdough used to produce the same bread. We get both from the Putka bakery – explains Leszczyński. What's next? No preservatives or filtration. – This is why each batch of kvass is slightly different and its taste changes over time. – he adds.
Kvass from Wolny Kraft also helps. The entire income from the sale of the first batch will go to charity, co-financing an educational and integration point for children from Ukraine, operating on the premises of the Legia Tennis & Golf complex. – We are already organizing various thematic classes at the point – artistic and sports – and in the near future we plan to start Polish language classes for children and their guardians. We want to support them in the process of integration with Polish society. And it is for this purpose that we need funds. – says Kamil Dudek from the Legia Foundation.
The Wolny Kraft Association plans to introduce a brand to the market – hence the second slogan on the kvass bottles: “By rzemiosło owoco”. It can be treated as a preview of a series of podcasts and subsequent products – produced using artisanal methods, just like kvass. When can we expect the next series? Wolny Kraft will gradually inform about them. For now, it is known that the natural kvass will be sold in 0.33 l bottles at the price of PLN 7.90. And that at first it will be possible to try it in the capital: first on September 21, and then on October 13-15 during the Warsaw Beer Festival.
